Baked Berry Puff

Ingredients Preparation
2 cups[500mL]fresh or frozen mixed berries
½ cup[125mL]Smucker’s® Pure Strawberry Jam
1 tsp[5mL]vanilla extract

PUFF BATTER
¼ cup[50mL]butter
6 eggs
1 cup[250mL]Carnation® Regular, 2% or Fat Free Evaporated Milk
1 cup[250mL]Robin Hood® All Purpose Flour
2 tbsp[30mL]sugar
1 tsp[5mL]vanilla extract
¼ tsp[1mL]cinnamon

GARNISH
1 cup[250mL]fresh or frozen mixed berries
  Icing sugar
Sauce: Place berries and jam in a small saucepan. On low heat, simmer for 2-3 minutes. Remove from heat, stir in vanilla. Reserve.

Preheat oven to 450ºF (232ºC). Place butter in a 10” (25cm) heavy ovenproof frying pan. (You can also use a 10”/25cm pie plate or baking dish). Place pan in oven until hot and butter is sizzling (about 8-10 minutes).

Batter: While your pan is heating up prepare batter. Beat eggs until light and frothy. Add remaining ingredients. Beat until batter is smooth, about 3-5 minutes.

Carefully, using a pot holder or oven mitt remove hot pan from oven. Immediately pour batter into pan and return to oven. Bake for 20-25 minutes until puffed and golden brown.

Remove from oven. Puff will start to deflate after being removed from oven. Serve right from the pan or place on a serving dish. Top with berry sauce, sprinkle on fruit, sprinkle with icing sugar, cut into wedges and serve immediately. Puff will deflate.

TIPS:
• Impress your friends and family, bring the puff to the table directly from the oven in the pan.
• Fruit sauce can be made a day ahead and reheated before serving.
